Four Seasons Hotel Seattle, a Forbes Travel Guide Five-Star hotel in downtown Seattle, and Ethan Stowell, local chef and restaurateur, have joined forces to create a new restaurant concept to replace ART Restaurant & Lounge. A soft opening date for the new restaurant is scheduled for late-spring. EDG Interior Architecture & Design will lead the redesign of the lounge and restaurant.
“Ethan’s restaurants define what Pacific Northwest food is all about – simple, fresh, creative and passionate,” saysIlse Harley, General Manager of Four Seasons Hotel Seattle. “This new venture with Four Seasons will combine his food and style with our extraordinary service and inspiring locale. Ethan will oversee the entire menu and help to create the atmosphere of the new restaurant.”
Stowell, whose restaurants include Staple & Fancy, Anchovies & Olives, How to Cook a Wolf and many more, was named one of Food & Wine’s Best New Chefs in America in 2008 and was nominated several times as “Best Chef Northwest” by the James Beard Foundation.
The design of the new space takes cues from the Seattle waterfront, the foundation of the city’s maritime history. Ship timbers inspired the main architectural elements and the patterns created throughout the downtown restaurant. Furniture and fabrics are inspired by the reflection of the Seattle skyline on the water. Colour tones of ambers, charcoals and blues blend together like the city’s reflection on Elliott Bay.
The lobby is enriched with deep blue and neutral tones, and contemporary dark oak wood screen wall elements animate the entry and restaurant feature walls.
“The custom seating centrepiece, located at the new restaurant entry, integrates the Hotel with the restaurant,” says Harley. “A balance of contemporary furnishings and organic materials invites guests to meet, dine and socialise in a relaxed atmosphere – a perfect fit along the waterfront.”
The dramatic interior boasts views of Elliott Bay, the Seattle Great Wheel and the Olympic Mountains from expansive windows, and the whole scene is anchored by a centre bar with textural tile and rich stone surfaces. In the mornings, the bar is energised with a barista station, while evening brings about a transformation with a focus on a raw seafood bar.
The sparkle of a glowing fireplace is captured in the reflection of local, hand-blown fixtures from Illuminata Glass, while warm wood tones and pops of blue and amber colour ground the restaurant interiors. Two private dining rooms near the kitchen feature waterfront views, each providing an intimate setting for 16 people.
With youthful energy and hip Seattle style, the new restaurant provides an approachable showcase for local Chef Joe Ritchie to serve his unique take on Pacific Northwest cuisine.
